The Bikini Cocktail
Serves 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Syrup: Place the listed items into a saucepan, bring to a light boil, mixing until the sugar dissolves. Then, remove from the heat and leave to reach room temperature completely. Pour to a sterilised bottle, close it and store in the fridge, where it will keep for about four weeks.
For the Batch Mix: Combine the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then filter it best through cheesecloth, to ensure it's completely strained.
When ready to serve: Measure 85ml of the cocktail base into a cocktail shaker packed with ice, and stir lightly for a minute to chill. Pour into a chilled martini glass or a similar vessel, top with the cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
